Wild Sea trout is silvery grey with black or reddish spots. Sea trout are also the same species as the brown trout, but sea trout are migratory, heading out to sea for most of their life and returning to rivers to spawn. Its time spent at sea means that it is closer to wild salmon in colour, flavour and texture but with a less prohibitive price. It has a subtle flavour that goes well with robust ingredients.
